Recipes That Taste Good

Lemon Surprise Pudding

1/4 cup butter, plus extra for greasing (1 stick plus some more)
grated rind and juice of two lemons
2 eggs, separated
1 1/4 cup milk
1/2 cup superfine sugar (found at Meijer for sure, called baking sugar)
1/2 cup self rising flour

Preheat oven to 375. Use a little butter to grease a 5 cup baking dish. (1.2 litre/2 pint)

Beat the lemon rind, remaining butter and sugar in a bowl until pale and fluffy. Add the egg yolks and flour and beat together well. Gradually whisk in the lemon juice and milk (will curdle, this is supposed to happen).

Fold stiffly beaten egg whites into mixture using a metal spoon, then pour into the prepared baking dish.

Plae the dish in a roasting pan and pour hot water to come halfway up the side of the dish.(called a water bath). Bae for 45 minutes until golden. Serve immediately.

The surprise is that at the bottom it is a pudding consistency. Keep this in mind while dishing out portions. Seres 4.
