I was asked for this recipe when he came to visit. It's been too long to be polite about putting it on here. But here it is... by special request:
Katie's Dublin Coddle
Sausage- whatever king of link like sausage your family prefers
Potatoes- enough for everyone (yukon gold or red taste better than idaho)
Fresh parsley- dreied will work too
Bacon- i like thick cut but use what you like (just not flavored)
Onion- use onion to taste, not everyone likes lots of onion
Okay. firstly- This is not a diet recipe. This is not heart healthy. this is a fill-you-up-and-please-the-men recipe.
With that said here it is. Changed in the original which i found in a budget friendly cook book(not so budget friendly).
step 1- Fry the bacon until crispy in a large skillet. The skillet needs to be big enough to fit everything in. When the bacon is crispy, or desired doneness, remove from pan and set aside to cool and chop later. Do not throw out grease. Reserve a little for later and use the rest to cook with.
step 2- Slice the onions and potatoes to desired thickness. Onions go better with this in rings, however, you can chop if you prefer.
Cook onions in skillet until just getting limp, then add sausage . brown the sausage a little then remove with the onions.
Step 3- Put potatoes in the skillet to cook, with a little water. Make sure they are covered.No more than a cup of water unless you need to add more after testing a slice. After about 15 minutes of the taters cooking add the sausage and onions to the pan. Cover and cook until the taters are done. if there is still liquid in the pan remove cover and let it cook away.
step 4- Chop the parsley. IF the bacon is not chopped, do that. sprinkle both over top of meat and potatoes and serve.
Like I said. It's not a diet dish. But it tastes sooo good! It's a big hit at our house when we make it. Enjoy!
